Swedish Cannonballs

September 19, 2022

Whether ABBA, Ace of Base, SAAB or Nobel Prizes, think Sweden and you’ll be forgiven if your thinking is more IKEA.

Add cooking to the maelstrom of memory then the first ambassador of Scandinavian cuisine is a right muppet. ”The Swedish Chef” no less. A throwback to childhood and the customs, flavours and delicacies, once enjoyed,

To celebrate my 2nd week return to dieting and a loss of 19lb, I decided to “push the boat out” for one day and have meatballs, actually cannon balls.

The Cannonball

  • 5% fat steak mince
  • white onion chopped
  • sliced sausage
  • cayenne pepper
  • sweet paprika
  • salt
  • oregano
  • minced garlic
  • egg

Add all ingredients to the mixing bowl knead with hands until youve a solid mass.

Fashion into palm size balls and airfry for 25 minutes at 200c.

Pasta & sauce

  • Pasta
  • tinned mushrooms inc liquid
  • can of mushroom soup plus the rinse
  • Italian herbs
  • sliced garlic

I used a digital pressure cooker, alternatively you use a hob pan.

Place all ingredients in the pressure cooker and mix well.

Cook for 10 minutes.

Keep warm for 30-40 minutes for the flavours to be released.
