I am not really a fan of plain boiled rice. Sure I have no dislike for it, however, I do tend to avoid it. Mix it up and I am more than happy to enjoy this starchy basic enjoyed by billions around the world.
My introduction to rice came in the form of “Mam’s rice pudding”. A milky sweet baked odyssey that usually followed roast beef for Sunday lunch.
I have a fondness for rice I suppose but just find it – boring!!
I am sharing a recipe/method for a lively rice with which I surprised Mrs TheLatestSupper by not only wolfing it down, actually having seconds – not something I do!
Garlic Rice
- 840ml Water
- 420g (2 cups) Long grain Rice
- 3 cloves of garlic
- Green jalapeƱo deseeded thinly chopped
- Red pepper deseeded
- Yellow food colouring
- 1cal spray
- Spray a sauce pan with 1cal and fry the garlic on a high heat for 2-3 minutes
- Add the rice and combine
- Add the peppers
- Add water & colouring
- Reduce to a simmer
- Cover pan and allow to simmer approx 15mins maybe longer
What you have is a visually interesting rice – looking very much like pilau but tasting with a hint of garlic. Salt lovers could add a teaspoon to the water.
