Cooking for me is a combination of therapy, necessity, and adventure. My LatestSupper certainly bore testimony to this. Therapy as to destress after a long yearned after event; necessity as in we need feeding; and adventure whereby the dish and the facilities were all new to me.
The ‘Main’ comprised of three parts; meat, vegetables and potato. Not too exciting but I think I’ll take item separately in order give a better understanding.
Salmon Roulade
200g of smoked salmon covered in creamy cheese (pepper and chives added) with another 200g of Prosciutto ham, add another layer of cream cheese. As a centre I used a mixture of jalapeƱo and olives. One guest hates olives and the other peppers.
Carefully rolling, the entire dish needs chilling for a minimum of 30 minutes.
Blanched Spinach and Toasted Nut warm salad
Using One Cal spray oil I toasted mixed nuts before introducing the spinach. This was served with slices of avocado and generous shavings of Parmesan.
Yam & Potato Rosti
Grated potato and sweet potato mixed together with spices (smoked paprika, whole dried garlic, black pepper, sea salt and oregano). Fried to give colour before being baked for 30 minutes.
