The Miracle in your Freezer

“Taking the five loaves and the two fish and looking up to heaven, he gave thanks and broke them.”  Luke 9:16

This is not the first nor will it be last time, I will pontificate on the wonders of that basic, timeless classic, the Fish Sandwich. Allegedly, John Montagu, 4th Earl of Sandwich, requested meat placed within two slices of bread to be served whilst he gambled the evening away at cards.

Our Lord of course (depending upon where you read) fed 4000 or 5000 men plus their spouses and children, turning a boy’s picnic of 2 fish and 5 loaves of bread into a veritable feast with some 12 baskets of left overs.

Protein and carbohydrates in the right measure are very much the building blocks of sustaining the human body. The majority of the time in these modern days a fish sandwich is a visit to a fast food outlet for a ‘Fillet o’ Fish’, or the deli tuna panini, baguette, sub etc.

But at home, when we were kids, did we not enjoy the fish finger sandwich with lashings of tomato ketchup? Even if our tea was fish fingers and chips did we not make the sandwich? Washed down with oceans of Kia Ora!

My light lunch which was both tasty and filling, I grilled some quite meaty specimens and served then in toasted granary bread, with cucumber, baby plum tomatoes, covered with coarsely chopped coriander leaves. Adding a supermarket sauce based on mayo and dill, made for a miraculous lunch and had me crying out in joy “this fish is good enough for Jeovah!”
