The All Day Breakfast Wrap

No fancy names or references to ‘pop culture’, just plain old “it says what it is on the can”, tonight.

Suddenly I remember a trip to MaccyDees many years ago whereby I was sat at the drive thru at 10:18 and waited to be served until 10:31. I gave my breakfast order and was told they stopped service at 10:30. I retorted in the manner of Michael Douglas’s character in the movie “Breaking Down”. Verbally I may add not resorting to opening an oversized duffle bag and proceeding to unleash hell via a M-16 assault rifle. I merely stated my position and Johnnie NoStars immediately serviced my hunger needs.

I mention the above to illustrate how far catering has come realising, that like cornflakes, why should breakfast items be only breakfast time dishes. The All Day Breakfast is a nice little moneymaker for any establishment that offers a grill service.

When I asked the daily question – yes I ask because as much as my head is full of recipes and ideas about food; it is nice to get an alternative input and it’s a courtesy after all. The response was “sausage, bacon, egg and can you do some Slimming World chips?” I smiled and nodded.

How does one make a healthy or at least Slimming World friendly version of the classic stodge platter? Quite easily actually. The secret is remove fat. Lean bacon, and air fried potatoes is a start. Keep the carbs under control by minimising interaction with fats. I am not a chemist nor I am nutritionalist, but what I have learned is, take a balanced approach. Protein not fat, Protein not high carbs and ‘Bob’s Your Uncle’ you’re half way home.

I have heard of diets that say avoid potatoes, bread and dairy. Sure that’s good advice however a modicum of those ‘deadly sins’ (or should that be SYNs); is acceptable. Remove dairy completely and an important source of calcium has left you. Watching one’s little toenail fall off some quarter of a century ago when I followed (zealously) WW was no joke! Thus you need the minerals from food, period.

To the kitchen then for this dish that serves two people and a rummage in the larder for the following:

  • 4 x smoked (I prefer) bacon medallions
  • 2 x Linda McCartney Rosemary & Red Onion Sausages (they are gorgeous)
  • 4 x Eggs
  • 2 x Wholemeal wraps
  • 1 x can Supermarket own brand New Potatoes
  • 1/2 can Baked Beans
  • 4 x 50% reduced fat Cheddar slices

The method is truly a joke. Air fry everything except the beans, cheese and wraps for around 15-20 minutes. Canned potatoes do not need anything added and crisp up wonderfully.

Beat the eggs and apportion in a microwavable omelette dish and nuke for 90 seconds, check give extra bursts of 30seconds until solid.

Place the cheese over half of a wrap, then add the bacon, sausage and egg, fold, & place on a hot panini/sandwich grill. Whilst cooking, nuke the beans.

Plate up and there you have it – All day breakfast wrap with chips for 8 SYNs – yes I mis-calculated on the wrap (NB WW wraps are a ‘Healthy ‘A’). Best of all it was less than 20 minutes in the kitchen and worth every second.
