After a life time of avoiding fish following a bad experience as an infant; it nothing short of miraculous for my new found like is.

Consider this, who hasn’t enjoyed the favoured Fish Finger sandwich with copious amounts of Ketchup? Driven through McDonald’s and used the excuse that a ‘Fillet O’ Fish’ is healthier than a Big Mac. Dashed into the garage picked up a hurried Tuna Mayo Baguette. Of course there were 5000 men fed without count of women and children some 2000 years from a boy’s picnic of fish and bread.

For my LatestSupper I ventured towards a pretty new fish to me pallet, the BASA. This replacement for cod was quite tasty. In this case helped by smoking.

I used only what was to hand for a fairly quick dinner. I prepared a dip of wholemeal flour, salt, pepper and Moroccan spice, and covered the fillet of smoked Basa ensuring by rubbing a good coverage.

To the hot pan I added a spring onion, 3 cherry tomatoes, 2 slices of Chorizo & 2 cloves of Garlic. As the tomatoes started to release their juice I added the fish and fried on a medium-high temperature until the fish was flaky.

Next I set aside the fish and added the remaining spiced flour to the pan making a paste before thinning with milk.

Everything was allowed to dress the Basa, onions, garlic, tomatoes and chorizo, and of course, my light spicy gravy.
