Leaning Tower of Pizza

My father used to annoy me or to put it another way, wind me up! I only discovered before he died he did intentionally as t0 get arise out of me and a giggle for himself.

When I would phone and ask “What did you have for tea Dad?” I would be greeted with the answer of Pisa or a Las Ang. Another favourite was quince. Of course I know he meant pizza, lasagne and quiche. I tried to catch out and asked where The Leaning Tower? He replied “Pizza, of course.

Today should have been my parents 66th Wedding Anniversary and I decided a fancied a pizza. Working in The Lockdown Kitchen I first made a rudimentary dough.

  • 250g of plain flour
  • 5g easy-blend yeast
  • 2 tsp salt
  • 25ml/1fl oz olive oil
  • 50ml/2fl oz warm milk
  • 125ml/11fl oz warm water

Mixed, kneaded and finally rolled out to a thickness of about 7mm. For my base I took some BBQ table sauce added tomato puree, garlic salt, basil and a dash of balsamic vinegar, mixed thoroughly to make a rich sauce.

As for topping it was Red Leciester, smoked bacon, sun-dried bell peppers and a couple of sliced black and green olives. Then in the oven for about 15 minutes.

The fun of pizza is, even with just ketchup and dairy-lea you can make something. It is truly a dish that an almost empty larder can produce in next to no time.

So for you Mam & Dad, happy anniversary and I have saved you a slice of Pisa!
